What does breakout mean?

A player who performs surprisingly well

A breakout is a player that plays surprisingly well and above expectations. The term is mainly used in sports such as football, baseball, basketball, and fantasy sports leagues.

Breakouts usually excel when they are surrounded by players and a system that play to their strengths. In fantasy sports, a breakout is especially useful when the player is acquired at a cheap price and produces a lot of points. When players don't meet expectations placed on them by fans and analysts they are quickly labeled a bust.
