EOP stands for "end of play," which refers to the end of a business day. It is similar to "EOD" where the "play" is meant to be a fun variation of "work."
EOP is rather obscure, but you may see it in a work-related email sent by a superior who loves work and thinks it's a more entertaining version of EOD. While it is primarily utilized to express the desire for something to be completed by the end of the workday, it may also refer to the actual hours that a business is open for, especially in-store hours for physical stores.
