What does NCZ stand for in online gaming?

An NCZ, or "no capture zone," is an area of a game map in which players cannot capture other players (or units). The NCZ is meant to be a safe space, where players can hide, heal, and/or adjust their build without worrying about getting captured by others.

NCZs are less common than NKZs (no kill zones), as more games focus on players killing each other than capturing each other. You're most likely to encounter NCZ while playing a real-time strategy (RTS) game, which includes some sort of unit-capturing mechanic.
