StarCraft 2 players refer to Protoss strategies that involve constructing and deploying a massive air force as skytoss. A skytoss force consists primarily of Carriers, which are supported by Void Rays, Phoenixes, and a Mothership.
Especially in lower-level play, skytoss is a strong strategy, which other factions have trouble combating. However, skilled players who understand how to combat the skytoss strategy can usually overcome a Protoss opponent who signals that they're going skytoss.
