Veggies is a common and playful way to say and write "vegetables." It may refer to any type of vegetable, such as carrots, broccoli, peas, corn, asparagus, etc.
While anyone of any age may use the abbreviation, parents often use it to make vegetables sound more fun to kids (who typically are not about them, at all). For example, a dad may ask his kids, "What kind of veggies do you want with dinner? Carrots, corn, broccoli, or asparagus?" To which the kids reply, "All of them, dad!" (yeah, right).
