Unsub has 2 meanings
Unidentified subject
When you're discussing criminal investigations, unsub is short for "unidentified subject." An unsub is the currently-unknown perpetrator of a crime, who investigators are attempting to identify.
While unsub is used by some criminal investigators, including those in the FBI, most laypeople who use it likely picked it up from American crime procedurals. In TV shows such as Criminal Minds, the show's fictional investigators refer to unknown perpetrators as unsubs.

When someone is discussing YouTube, Twitch, Netflix, or another service to which they (previously) subscribe(d), unsub means "unsubscribe." People often post the reasons they're unsubbing from a service on Twitter, Reddit, and other social media platforms.
For example, someone who previously subscribed to Netflix but does not like that the service raised its prices may post "Unsubbing from Netflix today ... for $16 a month, I'll just go back to buying DVDs." Or, someone who can no longer afford to support their favorite podcast creator may post "Sad to be unsubbing from MBMBaM today ... need the money thanks to inflation. Sorry boys!"
